İZMİR ADVANCED TECHNICAL SCHOOL FOR GIRLS WORKS IN AN EFFORT TO KEEP AEGEAN CUISINE ALIVE

İzmir Advanced Technical School for Girls affiliated to the Directorate of Lifelong Learning of the Ministry of National Education collected and recorded original forgotten recipes of the tastes of Aegean cuisine.
 
The kitchen of the school is preparing original recipes such as artichoke, stuffed vegetables, zucchini with olive oil, eggplant with yogurt, fried zucchini, lamb with fresh spices, stuffed zucchini flower and horse bean. Local people have the opportunity to place their orders for food and beverages during working hours by calling "0232 464 04 75/123".
 
School Principal Şule Aydın stated that they cooked according to the original recipes of traditional tastes of the region and their products are a nice choice for people who wanted to try different tastes while restaurants are closed as a part of the coronavirus measures.
 
Noting that the project is a result of long research, Aydın said that cuisine culture of the Aegean region especially İzmir was transferred from generation to generation throughout history and the Aegean cuisine took its place in the cuisine culture with its original recipes.
 
The school surveyed archives and written sources during the research and collected recipes after visiting Aegean provinces, districts and villages and they are recorded in the archives of the school. 
 
Aydın stated that they also managed to find almost forgotten recipes and recorded them adding that their goal is to keep traditional recipes alive and transfer them to younger generations.
 
Meanwhile, Food and Beverage Field Services Chef Demet Burçak stressed that the Aegean cuisine is very healthy and they also prepare healthy drinks based on original recipes.
 
"In line with the recent rise for the demand for healthy foods and beverages, we are working in an effort to prepare sherbets based on original Ottoman recipes and transfer this tradition to younger generations," she said.
